Kathiri Vathal

Kathiri Vathal is made from carefully selected brinjal pieces that are salted and dried for long-lasting use. These vathals are commonly used in traditional South Indian cooking to enhance the flavour of gravies and kuzhambu. When fried, they also make a crispy side dish that pairs well with curd rice, kanji, and porridge.
